Liquorice Festival in Copenhagen
Three-star chef Juan Amador does it. And so does TV chef Frank Buchholz: the two stars at the cooker season their dishes - meat or fish, vegetables or dessert - with liquorice.
The liquorice root gives the dishes a special touch - and also promotes well-being with its many secondary plant substances.
While the use of Glycyrrhiza glabra, as it is called in Latin, is still relatively unknown in Germany, liquorice is almost a common condiment among our neighbours in Denmark.
The annual liquorice festival shows what can be done with liquorice in the kitchen - in 2020 for the first time in Odense on Funen.
After a theoretical introduction to the history of liquorice, its active ingredients and its use in pharmacies and kitchens, it's time for practice at the cooker.
Innovative dishes - from sweet to salty - are created in an open kitchen. Manufacturers show their latest products and visitors can taste and buy them.
